Halloween Punch

Ingredients:
12 oz orange juice concentrate, frozen
12 oz white grape juice
2 liters 7-up
1 pint orange sherbet
Suggested Alcohol: Vodka

Directions:
Mix together all ingredients.

Ginger-Lime Tea

Ingredients:

  • 2 tablespoons grated fresh ginger
  • 2 tablespoons honey
  • 2 tablespoons lime juice

    Directions: 
    Bring 2 cups water to a boil. Add the ginger, honey and lime juice, remove from the heat and steep for about 10 minutes. Strain.

    Frozen Chai Tea Smoothies

    Ingredients:

  • 1/4 cup honey
  • 2 cinnamon sticks
  • 5 whole cloves
  • One 1-inch piece ginger, finely chopped
  • 7 bags black tea
  • 1 pint vanilla low-fat frozen yogurt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cardamom
  • 3 cups ice cubes

    Directions: 

    1. In a saucepan, combine 1 cup water, the honey, cinnamon sticks, cloves and ginger over low heat. Cover and simmer for 10 minutes.
    2. Remove from the heat, add the tea bags and let steep for 5 minutes. Strain, then let the tea cool for 20 minutes.
    3. Using a blender, combine the tea, frozen yogurt, nutmeg and cardamom. Add the ice cubes and blend until smooth.

    Ginger-Tea Lemonade

    Makes 4 to 6 Servings

    Ingredients:
    2 cups water
    3 black tea bags, preferably English breakfast tea
    1 1/3 cups Ginger Simple Syrup, recipe follows
    2/3 cup fresh lemon juice, from about 3 lemons
    1 cup sparkling water or club soda, chilled
    2 cups ice
    Lemon slices, for garnish, optional

    Directions:
    In a small saucepan, bring the water to a boil over high heat. Remove the pan from the heat and add the tea bags. Stir and allow the mixture to cool to room temperature, about 20 minutes. Remove the tea bags and discard. Add the Ginger Simple Syrup, lemon juice, and sparkling water.

    Put the ice in a large pitcher. Pour the lemonade mixture over the ice. Garnish with lemon slices and serve.

    Ginger Simple Syrup:
    1 cup granulated sugar
    1 cup water
    1 (2-inch) piece fresh ginger, peeled and chopped

    In a small saucepan, over medium heat, combine the sugar, water and ginger. Bring to a boil, reduce the heat, and simmer stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.

    Low-Sugar Lemonade

    Makes 4 Servings

    Ingredients:
    5 lemons
    1/2 cup unsweetened applesauce
    1/4 cup maple syrup
    1 quart sparkling water
    1 handful mint sprigs

    Directions:
    Juice 4 of the lemons; slice the other lemon and set aside. Blend juice with applesauce and maple syrup. Stir in sparkling water. Pour mixture into large pitcher over ice. Garnish with lemon slices and mint sprigs and serve.

    Peachy Pick Smoothie

    Makes 2 Servings

    Ingredients:
    6 ice cubes
    1/2 cup part skim ricotta
    1 1/2 cups diced peaches
    1 cup grapes
    2 tsp almond extract
    1 tbsp apricot jam
    1/4 cup chopped almonds

    Directions:
    Blend ricotta and ice cubes first.  Then add remaining ingredients.  Blend well. Serve.

    Berry Bliss Smoothie

    Makes 2 Servings

    Ingredients:
    6 ice cubes
    1 cup plain soy milk
    1 1/2 cups raspberries
    1 cup blueberries
    1 tsp vanilla extract
    1 tbsp maple syrup
    1 tbsp ground flaxseed

    Directions:
    Blend soy milk and ice cubes first.  Then add remaining ingredients.  Blend well. Serve.

    Tropical Treat Smoothie

    Makes 2 Servings

    Ingredients:
    6 ice cubes
    1/2 cup sparkling water
    1/4 cup light coconut milk
    1 cup diced mango
    1 1/2 cups cubed pineapple
    1/4 cup fresh mint
    2 tbsp agave
    1 tsp orange zest

    Directions:
    Blend sparkling water, coconut milk and ice cubes first.  Then add remaining ingredients.  Blend well. Serve.
